Albacore Tuna is the only species that can be called "white tuna." It has a pinkish white color a fairly firm texture, almost chicken breast-like when baked, with a strong bite and mild flavor. Grilled or pan-cooked, it goes great with a soy marinade or even a bolder chimichurri. Wildly natural albacore tuna at its best, sustainably managed, responsibly harvested and frozen at sea.
