P. eryngii var. tuoliensis CJ. Mou

The abalone mushroom(P. eryngii var. tuoliensis CJ. Mou) is an edible variety named for its texture, which resembles that of abalone.

Native to southern Europe and China, it remains relatively rare in Japan, with limited domestic production.

Its firm, chewy texture makes it ideal for dishes such as tempura or buttery sautés that highlight its unique mouthfeel.
