Jan's "Pandamonium wines," as they are called, are unfined, unfiltered, hand-bottled, and contain NO SULFUR and varying levels of palate-tingling residual CO2. The results are rivetingly good; fresh in character, light on their feet (all under 11%),and joyful to drink. The feverishly drawn artist labels, often featuring the wolf mascot of the estate, are hilarious and eye-catching. For those who think the pleasures of “glou-glou” and farm-to-bottle wines do not exist in Germany, these wines are a wake-up call and invitation. "12% vol. 6.3g/l acid , 0.7g/l residual sugar, fermented in 2 Mosel Fuders until August then put straight into bottle after malolactic fermentation ended. One Fuder was from Steffensberg and one from Letter lay vineyards."It’s part of my new Pandamonium range where I collaborate with very small producers to support them, in this case with a Polish winemaker in our village who grew the grapes for it and we each made one barrel and blended everything in the end."
